I realise pressure will build as the coolant heats up, but the above happens when the car is totally cold and not running long enough to heat up.

Had the same problem with mine, turned out to be the horn relay. Replaced it and worked fine.

I'm sure my dad has a set of genuine toyota roof bars that he has no need for (sold his toyota a few years ago) that he'd be willing to sell.

Have you tried replacing the horn relay? The horn on my car packed up, you could still hear the relay clicking under the bonnet whenever the horn was pressed so dismissed that as the problem. Spent ages trying to track down the problem then swapped the relay out with a mates car and it worked first ...
