rear end unstable

This is what happens if the rear is jacked up slightly and the strut is in tension

Yep, definately wrong hubs/arms or subframes fitted.
Is your car a Mk1a or b Tim? Looks like an A doorcard?
So presuming it has B hubs fitted, it must also have B struts, because A struts won't fit B hubs, so you'll need to go back to A struts as well.

Its a B Paul, (with 1a interior - its nicer IMO)
Thinking about it, I think both of the lower arm parts could be off my old 1a.

The lower arms are all the same, so it isn't that.
Presuming it has B subframes fitted, it must have A hubs and A struts fitted Tim.
Grab a pic under the car of the hub where the rear adjustable tie arm bolts on and we'll nail it down, also inspect your subframe rear crossmember mounting tabs to check they are the original ones.
Watching that video you've actually done amazingly well keeping that straight given how badly the rear wheels are trying to kill you lol.

Lol. Its all about the pink and brown.
Yarp, they are the mx5 Mazda enkei wheels that came on some imports.
Painted in dulux with a roller.The whole car cost 15quid to paint
