If it's MSA sprinting in a roadgoing class then everything originally fitted in the interior must be present and working with the exception of seats which can be replaced with buckets or similar on safety grounds.
But in the OP he says there is another mr2 completely stripped out, so it's obviously not against the rules of this sprint.
Weight reduction is the single best thing you can do to a low powered car, and would be the way to go IMO.
