Before you say "ah Swiss I am 6ft2 and fit easily in" well, I don't . I think I am very long in the leg as my knees are uncomfortably close againt the bottom of the steering wheel. Anyone have the same difficulties? I'd love to get one but simply can't fit in the thing!
I don't have any trouble with an MX5 or S2000.

Fitting a race seat will give you lots more space. Problem is, once it's bolted in place it's no longer adjustable...

Try a pre '03 car.
I'm 6ft 2 and had the same problem in the newer car that I tried, but the pre-facelift model seemed to have a slight variation on the seat positioning and I was fine (just) in that one.

The last mk3 I tried over the weekend was a W reg, purely as it was nearby. It was marginally better as you say Charlced, but only just.

I dont know what seats the cars you have tried had, but I swapped the cloth seats in my 2000 model with leather ones, and this gained some extra legroom.....
(I'm 6'3", btw..!)
Maybe the leather ones are more worn than the cloth OEM's, but they're certainly a little lower......

Cloth seats in this particular example. Knees were rubbing against the steering wheel. Too close for comfort and rather dangerous in an accident really!

Although wierdly, I do have a problem with fitting in an S2k
Tried bringing the seat slightly forwards to get more tilt on it?

An ex girlfriend of mine's dad was 6ft tall, but he was oddly shaped, with short legs and a long body. He told me he took an RX7 for a test drive but struggled as his head was touching the head liner but he had to have his seat almost all the way forward to reach the pedals

Speedy, I haven't tried moving the seat forward yet. I will try but that could just leave my knees behind the wheel collar instead

I'm just over 6ft and the same as speedy, can fit in a mk3, but not a s2k. Although in a mk3 the top of windscreen does appear in vision preventing traffic light viewing.

6'7'' and i have no problems! Have toyed with the idea of removing the centre console and door handle but there's really no need. Demon tweeks do massive steering wheel spacers that will bring it past your knees if that helps.

Same sort of thing, if anything remove off the door handle parts cos they are what traps your knees.
