Ive got the head off my rev 2 turbo to learn it has been off before as it had a mls gasket so im guessing it may have already had a skim.
Before fitting back on i will get it checked and it may need a skim again to make it completely flat but how do i know when its too much of a skim and also what thickness headgasket i would need.
Obviously i will tell the engineers to check the flatness first and if it does need it a minimum skim as poss.

Someone correct me if wrong. If it's flat just get it surface ground. If it needs a skim then there should still be plenty meat but the waterways are the highest points so check that.
A skim doesn't take much off so think you will be ok with a standard hg otherwise you can measure the piston squish.
