I can be rolling down a hill in 5th - doing 2500revs and there is no noise.
I push the accelerator ever so slightly still doing around the 2500revs and this horrible whine occurs from behind my head.
Fades out at around 3100revs.
Does it in all gears between 2000 and 3100 revs, only when I am pressing the throttle

Could be gearbox. When did it last have an oil change?
Could also be the alternator.
Can you record it? Could pinpoint it in 2 seconds in real life, so hard over the internet with a vague description.

alternator maybe or clutch thrust bearing ... hope its not serious

You can eliminate some things by removing the drive belts to them, alternator etc.
Don't drive far though !
Having said that from your description it could be the final drive in the gearbox or a wheel bearing.

Id say wheel bearing would do it under load or no load so id rule that out.
Im sure the tone of it would change with or without clutch and also would do it under or no load if gearbox so id start with the alternator.
Take the belt off and see how you get on.

Thanks for the replies everyone will take a look later. If it is something in the gearbox then I would end up with a hefty bill at a garage as I would get clutch done and the Speed sender unit at same time, but so be it.
Will try removing alternator belt and driving a short distance.
Sorry pbMR2 - I am way north in West Scotland.
I could try to record it but obviously just be in cockpit of car and it's really hard to hear it on video over the Blitz exhaust and road noise etc. Have tried.

My vote would be belt related, most likely alternator belt, failing that check other belts.
It would be much easier to diagnose with a sound clip or hearing it in person so if not belt related you will probably need a professional diagnosis

Wheel bearing noise wouldn't just come on song at a certain rpm and with the touch of the throttle.

Not sure about the MR2 final drive but the noise described is classic of a worn pinion bearing in a rear wheel drive axle. Quiet when coasting but pinion gets pulled closer into crown wheel under power.
