If I'm going to spend £300 + £150 fitting on it I want something far more granular than "it works". How does it differ exactly and how do these differences affect the driving experience?

To an owner who uses the car as a simple road car, there is no real difference. To a racer, track dayer, or drag racer, viscous and clutch LSDs are very different.
In simple terms is the major downside to a viscous LSD is that it really doesn't work until one wheel physically breaks traction, whereas the clutch type LSD is constantly trying to keep both wheels moving at the same speed (e.g. in turns, or when one wheel is forced to spin faster than the other).

Have you worked on a E51 gearbox before, if so how much do you think it will cost to put in to my gearbox which you have for mk1 sc?

Same price as an E153 gearbox. An E51 is essentially the same inside asa Rev1 E153.
Cost to install in your box same as E153, £150.00.

On closer inspection, this is a CUSCO Type RS LSD.
It can be setup for 1 way or 2 way, depending on intended use.

All plate type LSDs use clutch plates and springs to try to keep both wheels rotating at the same speed and prevent wheel spin.
A 1 way LSD only operates under torque from the gearbox side as in under acceleration.
A 2 way also locks under deceleration, i.e. off throttle.
A road car with occasional track day use would use 1 way. A race or drift car would use 2 way.
