Im looking to get some of these wheels and wondered what size tyres i needed and if they will cause a problem on my mk2?,I know they will stick outside of the body work but im getting some wide arch`s to solve this issue.

I'm pretty sure that some serious arch would would be needed to fit those wheels.

I'd be more concerned about the wheels actually fitting in without rubbing the suspension & having some thread on the hub to bolt them on.

Bolting them on should not be a problem if I need longer studs then I will get some as for the rubbing on the suspension I don't no yet that's why I need advice regarding this cause it would be a costly mistake I they don't fit when I've bought wheels and tyres

I personally would think they would be too wide.
Have you used a wheel/ tyre calculator to estimate the change in wheel size and factored in the overall change in gearing and force put through the transmission because of the size change?

Id be inclined to go for 245 fronts and 285s back at least! But as everyone else says the problem will most likely be the rubbing issue. Let me know how u get on though as ill be looking to getting wider wheels in winter

225/40/18 would be too tall for stock struts - the tyre won't fit under the spring perch. 225/35/18 would be a better choice and 'should' fit under the perch ok.
275/35/18 should fit but is a very tall tyre - although this probably isn't much of an issue if you are fitting such a large wide arch extension. I would go with 285/30/18 personally (I have done that size R888 tyre before on an 18x9.5" ET38 alloy and the size works well on a Mk2).
Both front and rear alloys in those widths and offsets should bolt on and fit/clear the stock suspension struts with those 2 recommended tyre sizes. You just need to make sure you have enough turns on the wheel nuts - if not then as you say fit longer studs. Tire rack recommends a minimum of 6.5 turns on a M12x1.5 wheel stud.
Btw the wheels you have linked to won't actually poke out that much from what is traditionally considered flush on the stock bodied MR2s. You are looking at about 23mm past stock arch at the front and 34mm past stock rear arch with those alloys. Although I do understand that a 6" wide arch extension might not necessarily mean you end up 6" wider as it would depend on where you attach it to the wheel arch.

225/35/18 will fit as fronts, just.. Anything wider will run the risk of rubbing on the struts.

I've got 9J et20 17" on the front, required 5mm spacers to prevent rubbing on my coilovers. They're 225/40 IIRC

That will be because coilovers are generally slightly wider than stock struts so you usually need at least 5 to 10mm more clearance on the inside compared to the stock units. The exact amount will depend on which brand of coilovers you are using.
A 225/40/17 is almost the same radius as a 225/35/18 so you can get away with a 225 width 40 profile if you use a 17" front alloy but a 225/40/18 on stock struts will be too tall and hit the underside of the spring perch.
