How many are there for the MR2 and in them can you modify the car to allow for FRP/CF prodcuts?

Three:

Toyota MR2 Championship
MR2 Super GT Series
Mk1 MR2 Racing Series

Of those, only the MR2 Super GT series permits aftermarket body panels.

TSS allows lightweight panels to be fitted, although doors can only be modified/replaced if you have a cage with doorbars.
