Firstly I've replaced my Rev5 Steering Wheel with a MK3 one (my choice to lose the ageing airbag). What I didn't want to lose was the red stitch effect. So I googled a DIY way of doing it and here's the finished article:
I then decided I needed a boost gauge (my car being a Turbo conversion in a UK car didn't have one). I prefer the oem look so decided to fit a 45mm Prosport Boost a Gauge in place of the voltmeter. It was amber and a bit bright at night so I used some of the red film left over from doing my dash and clock to slightly tone it down. Now matches my stereo and clock.
The Red Stitching was fairly easy and inexpensive to do (under £6.50). You actually leave the original stitching in place and just follow it with the red over the top. Gives a good effect.

Slightly thicker pre-waxed linen thread would have been ideal if you can find it. The thread I used I doubled up (easier to sew that way) and run through the bees wax. I'm happy how it turned out.

Nice work, but why not just fit the Mk3 airbag unit to the existing Rev5 JDM steering wheel? It just needs a small adaptor harness available cheaply from Toyota.
The mk3 (and Gen 7 Celica and IS200) steering wheel are essentially the same but with different colour stitching IIRC.
I fitted a gen7 Celica steering wheel and gen6 Celica airbag to a previous mk2. I never "tested" it mind

If only! My car is a UK Rev5 NA (with Turbo engine conversion). The original airbag is mechanical and self contained. See my other post with further details.

Ah ok, apologies, must be a different set up.
I thought it more simple than that, as my previous Rev4 G-Limited (NA) was a straight forward swap with a Mk3 steering wheel, adaptor harness and a celica gen 6 airbag like this one:

Does the mk3 air bag just detach from the centre pad? So you can run the wheel with no airbag? Thanks.

Yep. That's what I've done. 4 small bolts and off it comes.
