7.5" on 215s is fine, I run this size tyre but with an 8" rim on my TE37's.I do like the tyres to be a little stretched to take the slack out of the sidewalls though.
You will get some bad tramlining on an MK1 with such wide tyres though.
The MK1 steering doesn't really help in this respect as it will be pretty heavy at parking speeds.

I've recently bought(well I will when I get back from holiday) a set of Work Meister S1's for my AE86 in 7.5" which I will run 195/50's on.
