You could try removing the other 4 nuts and pulling the wheel towards you in the hope that the splines on the stud will pull into the hub enough that you can then undo the nut.
If the splines have ground off or the hub has stripped so there's no purchase at all you'll have to drill it out.Use some wedges to hold the nut steady, start with a small central pilot hole and work up to a bit large enough to take out the thread.
Maybe someone who has had this happen before has a better idea?

And how does he do that when the nut is turning the stud instead of undoing?
Other than what Mullen has suggested, the only thing I can think of is trying to weld the backside(flanged part) of the stud to the rear of the hub face but I really don't think there's enough access with the hub in place to do it.
