Narrower than standard to dig into the snow?
Keep them staggered front/rear?

Different between a MK1 and a MK2 since the MK1 never came with staggered wheels. I woul dimagine even on standard rims, with snow tyres it will improve your grip, handling etc enough to make it worthwhile.

What are the disadvantages of Rally and remould tyres over normal Winter tyres?

Probably do not have the same compound. One of the reasons winter tyres work so well even when there is no snow and ice about is that the compound is designed to perform best at temperatures of <7C.

I would imagine rally tyres have a tread designed for soft conditions but may well otherwise have a standard compound. Remoulds could be anything tbh.

Have you checked with your insurance company? Some of them count these as a modification as you would take the car out in conditions that you'd normally avoid otherwise.

Looks like you still need to clarify whether or not it is an issue with them though. Biggest issue seems to be people changing to winter tyres and changing their alloys as well.
