Coolant temperature sensor is simply a classic for bad old starts. . It's cheap and easy to do... Just get it done.

Fit a new coolant temperature sensor.

Sounds like it's missing I'd check the spark plugs ie switch the old one with a new one that wasn't replaced. Check and replace dizzy plus rotor. And then I'd say because it's been sat awhile just drive it if possible.
