Yeah, it's doable at home, just a drain plug and a fill plug. Did it work just out of interest? As said above, never put 95 in there. It causes all sorts of issues with Turbos, even if not immediately obvious.
I don't reckon you'll need to replace the knock sensor either, they very rarely go wrong on mildly tuned tubbies.

Wind deflectors
I was looking to get some wind deflectors (is that the name for them?!) so I can have my windows down slightly when it's raining and to stop wind. Does anyone have any recommendations? I have a tin top so no t-bar issues when removing.

Hi Pal looks like I've solved it, Rougue Motorsports make the rails with side mounts. I've asked them though if i can just by the rails as i have already purchased Corbeau side mounts. luckily they have a old pair in stock and a new pair and are willing to split from the side mounts and sell to me....

I would use a 65mm spreader plate under the car, and use a square washer plate slid under your carpet to reinforce the top if you want peace of mind.
