Stock Rev 3 headgasket will fit and work fine no drilling needed.

No reason why the airbag light would come from doing that, other than if you damaged the plug or havnt plugged the cable back in properly.

Loads of different pads available, shop around. Rev 2,3,4,5 brakes are all the same. Dont know why the Rev 1`s had adjustable fronts, keep them on though. Dont know about track set-up alignment, far as I know its depends how you like the car to drive. I would get it set-up to standard spec and then ...
