Does anyone know any "How-to's" or similar for fitting the dial surround. Basically i just need to know how to take the dash apart without breaking it!

I fitted the white dials about a month ago. It is not too difficult. Probably easier to do it before fitting your steering wheel (from your other post).
There are 2 screws behind the ash tray. One below the cig lighter. Unscrew them you should be able to take the mid panel out.
After that, you should uncover another screw for the right side of the dash. Also, there is another screw near the ignition area (I forgot the exact place). Remove those 2 and lift should allow you to see the dial cluster.
Then it is a matter of removing the screws and see which part you can take out.
I am not very good in explaining. Need to have a look at the instructions I got when I fit the white dials. Maybe scan it and send you a copy if I can hadn't throw it away.
One other word. Be gentle to your car...
