Do you just need to replace them? If it's for a Gen3 then I think I have a set of 4 new OEM ones somewhere. Let me know, I'll check when I get home.
IIRC, manifold side is M12*1.25, turbo side is M10*1.25.

No I dont need to replace them (luckily) but the current nuts I have keep coming loose and hence blowing the gaskets. Im making a copper gasket and want to fit self locking nuts on which should solve my issue with them coming undone.
M10 * 1.25 sounds right as thats what i remembered for the turbo side, then have doubted myself.

What nuts are you using? The OEM ones are a type of locknut, they're 'squished' at the end.

ones that were originally on the car. No squishy bit but do look like an OEM type of nut.
The ones Im looking at are similar. This potentially explains them coming loose then.

Yeah, they are really a one use item. Installation and removal deforms the nut back to a rounder shape so they don't 'bite' as hard into the stud on further installations.
A new set of OEM nuts should sort it

If you really want to be certain and don't mind paying a bit more then take a ganders at the stage 8 locking fasteners.

Squash the top of the nut in a vice so it's a bit oval shaped.
